Watermelon and Avocado Salad with White Balsamic Vinaigrette

Watermelon equals summer, if you ask me.  And if you’ve never thought to put watermelon on top of your greens, then I’m here to tell you that I’ve found my new favorite summer salad.  I’m new to this deliciously refreshing combination myself, so I’m not one to talk.  While visiting my son and daughter-in-law recently, we made this salad and I was hooked.  In fact I think we ate it every day during my visit and now I’m living on it this summer!

I’ve added avocado, crumbled feta cheese, minced red onion and a delightful balsamic vinaigrette that you’ll want to use on just about any other salad you make.


Even if your watermelon isn’t amazingly sweet, the juicy texture adds such a surprising burst.  And a recipe calls for only 2 cups of cubed watermelon so you can use the rest of your watermelon for another day.  I like to cut it up and have it ready for on-the-go eating, picnics or other summer salads like Mixed Fruit Salad with Lime and Mint or Tomato and Watermelon Salad.

Nutritionally watermelon is of course naturally sweet and can quickly raise blood sugar, so be sure to pair it with some kind of protein or fat to slow the absorption of the sugar, just like I did with the feta cheese, avocado and the olive oil-based dressing.  Additionally watermelon has been shown to help with reduction in delayed-onset muscle soreness following exercise, you know that annoying often debilitating soreness that comes a day or two after a workout caused by inflammation in muscle fibers.  Read more HERE.

Watermelon and Avocado Salad with White Balsamic Vinaigrette

Watermelon and Avocado Salad with White Balsamic Vinaigrette

  • Watermelon and Avocado Salad with White Balsamic Vinaigrette
  • 8 cups spring mix salad blend
  • 2 cups cubed seedless watermelon
  • 4 ounces crumbled feta cheese
  • 1 avocado, peeled and sliced
  • 1/4 cup finely diced red onion
  • White Balsamic Vinaigrette
  • 1/4 cup white balsamic vinegar
  • 2 Tbsp fresh lime juice
  • 3 Tbsp honey or other sweetener of your choice
  • 1 Tbsp Dijon mustard
  • 3 garlic cloves, minced
  • 1 Tbsp dehydrated onion
  • 1/2 tsp dried rosemary leaves
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup olive oil
  1. Arrange spring mix on a large platter or bowl. Add watermelon, feta cheese, avocado slices and red onion on top of spring mix.
  2. For the Vinaigrette: Combine vinegar, lime juice, honey, mustard, garlic, onion, rosemary, salt and black pepper in container or jar with lid. Cover and shake to combine. Add olive oil; cover and shake until oil is incorporated.
  3. Pour as much dressing as desired over salad. Store remaining dressing in refrigerator.
