Unforgettable Baked Beans

When my son Madison, lived in San Antonio, Texas for two years he fell in love with Texas barbecue which includes baked beans.  So when he returned to Idaho, I made sure I helped him transition by baking this recipe and that makes them unforgettable!  It’s really a pretty simple recipe because you start with canned baked beans . . .  What?  Then you add all your own touches with pineapple, bacon, onion, green pepper, etc.  It takes time to simmer, but the more time you can allow the flavors to mingle the more unforgettable this dish becomes.  Perfect for your next summer barbecue.  So yummy!


Unforgettable Baked Beans

Total Time: 2 hours, 30 minutes

Yield: 10-12

  • Unforgettable Baked Beans
  • 1/2 pound bacon, cut in to small pieces (choose nitrite/nitrate free)
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 2 (28-ounce) cans baked beans
  • 1 (14-ounce) can Great Northern white beans, drained and rinsed
  • 1 (14-ounce) can kidney beans, drained and rinsed
  • 1 (20-ounce) can pineapple tidbits, drained
  • 1/2 cup ketcup
  • 1/2 cup brown sugar
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  1. Add bacon to large casserole dish or bean pot and place over medium high heat. Brown bacon until crisp; remove from pot and drain bacon fat except for one Tbsp. Add onion and green pepper to pot; saute until soft, about 5 minutes.
  2. Add remaining ingredients, including cooked bacon and stir to combine.
  3. Cover pot and bake for about 2 hours at 250 to 350 degrees.
