Curry Turkey Meatballs with Thai Peanut Sauce

Meatballs, meatballs, meatballs.  I can’t get enough of them.  Tiny little packages of ground meat, vegetables and seasonings make me sing!  And they’re so versatile.  You can create just about any flavor combination you want.  Don’t get stuck in the traditional Italian meatball rut.  Don’t get me wrong, I love traditional like these Amazing Italian Meatballs I first posted way back in 2014 when I first started food blogging.  Those are a family favorite and I’d never give them up.  But it’s fun to explore new and different kinds of meatballs.

This Asian twist to the meatball starts with ground turkey.  I use 97% fat free vs 99% to add a little flavor from the turkey fat.  I add egg, coconut flour (cut back on carb content here), Thai red curry paste (this is a great product found in the Asian food aisle), chopped green onion, grated fresh ginger, minced garlic, chopped cilantro and a little salt and pepper.  Mix it all up in a bowl and knead lightly; don’t want to overmix or they get too tough.

Form into little balls and bake at 375 degrees F for about 20 minutes or until no longer pink inside.  While they’re baking I make the peanut sauce.  This is finger licking awesome sauce made with peanut butter, soy sauce, chili garlic sauce (you control how much kick you want here), lime juice and brown sugar.  Simple and tasty.

I love serving these nutritious bundles as finger foods at potlucks, football tailgates or on snack boards for our traditional Sunday night snack.  (See more info on this tradition HERE.)  Kids love meatballs because they’re just fun to eat–no difficult cutting, texture is soft and easy to chew and they’re yummy!  Nutritionally you can’t beat them for the high protein content and added nutrients from vegetables and healthy fats.  Serve on a bed of brown rice if you’d like!

It’s Meatball Mania here at our house.  Hope you enjoy them!
