Strawberry Avocado Salad with Honey Lime Poppyseed Dressing
Mother’s Day is this weekend. I have the fortune of attending the wedding of my brother in Arizona! Seven of my eight siblings will be there to join in the celebration. What an appropriate weekend to celebrate the love we have as a family. I was given such a loving, empowering childhood and am so grateful. My mother has passed on, but she is always with me. If I can share the same kind of love and positive nurturing that I received with my own children and to my grandchildren then their lives will also be so blessed. Happy Mother’s Day to all of you!
This delicious salad is the perfect addition to your Mother’s Day Brunch. It’s full of spring’s beautiful bounty: strawberries, avocado, green onions and sliced almonds all nestled in a bed of fresh spring greens.
You’ll love the sweet, savory dressing made with honey, lime, olive oil, poppy seeds, garlic and salt. Simple and fresh!

- 4 cups fresh spring mix greens
- 1 cup sliced fresh strawberries
- 1 avocado, peeled and sliced
- 1/4 cup sliced green onions
- 1/4 cup roasted sliced almonds
- 1/4 cup fresh lime juice (juice of 2 limes)
- 3 Tbsp honey
- 2 Tbsp poppyseeds
- 1/2 tsp garlic
- 1/2 tsp sea salt
- 1/2 cup olive oil
- Arrange greens in a large serving bowl. Place strawberries, avocado, green onions and almonds on top.
- Combine lime juice, honey, poppyseeds, garlic and salt in a small container with a lid. Cover and shake vigorously. Add olive oil. Cover and shake again. Refrigerate until ready to serve.
- When ready to serve, pour dressing over salad and toss to combine. Enjoy!
