Grilled Zucchini with Garlic Lemon Baste
Growing up in Southern Cal meant a lot of fresh fruits and veggies on my plate. My mother loved zucchini and to this day, every time I eat it I’m reminded of her. She loved to mash it, steam it, bake it, souffle it, cheese it . . . it didn’t matter what she did, I loved every recipe. In honor of Grilling Week here at Inside Karen’s Kitchen, I’ve grilled the zucchini with a fabulous garlic lemon baste. So easy – cut the zucchini, baste it, lay it on the hot grill, 10-12 minutes later take it off the grill, baste a little more and top with a little Parmesan cheese if you wish. Tasty! Tasty! Match it with your favorite grilled meat or Grilled Portobello Mushroom Burger for a perfect 4th of July summer meal!
Grilled Zucchini with Garlic Lemon Baste
- Grilled Zucchini with Garlic Lemon Baste
- 4 medium zucchini (about 1 1/2 pounds), trimmed, halved lengthwise
- 1/4 cup butter
- 1 tsp lemon zest
- Juice of one lemon
- 1 tsp garlic powder
- 1 tsp Herbes de Provence seasoning
- 1/4 tsp each sea salt and fresh ground black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Prepare grill and set to medium heat.
- Score the cut side of zucchini halves diagonally about 1/4 inch deep at 1-inch intervals.
- For the Baste: Melt butter with lemon zest, lemon juice, garlic powder, Herbes de Provence, salt and pepper in a small saucepan. Brush seasoned butter on cut side of zucchini.
- Place zucchini on grill and cook until charred on cut side and just beginning to soften, about 10-12 minutes. Brush with any remaining baste before serving.
- If desired, arrange zucchini on grill, cut side up, and sprinkle with cheese; close lid of barbecue and cook until cheese just softens, about 1 minute.
- Transfer zucchini to platter.

This was so delicious! I think maybe next time I will use a little less butter. I love garden fresh zucchini on the grill!! And I didn’t know Nani loved zucchini. It’s so fun learning things like that. xoxo
