Asian Chicken Meatballs

At some point in your life you’re going to be cooking for just one or two.  It might be now while you’re young, single or married and kidless or it might be later when you’re older, single or married and kidless . . .  that’s weird isn’t it?  Sometimes life goes back to the beginning.  No matter what your circumstances you’ll need a few recipes designed for cooking for just one or two.

Eating for one or two often creates a conundrum because most recipes call for many more servings than needed.  So now that my nest has emptied, I’m looking for recipes that store or freeze well.  And making bite-size or single serving portioned recipes are even better, like these yummy meatballs.  Eat as many as you’d like in one sitting or save them for later.

Make with ground chicken, sesame oil, lots of fresh grated ginger, garlic, an egg and sliced green onion.  Be sure not to overmix the ingredients or the meatballs will be tough and rubbery.  Bake at 400 degrees F for just 10 to 12 minutes.

They store well in the refrigerator for up to a week in an airtight container or they freeze nicely as well.  Just pop in the microwave and reheat to your desired temp.  I also don’t mind eating these tasty little balls unheated, right out of the frig because you can do that when you’re eating for one or two.  Just sayin’

While they’re cooking I make up this tasty sauce made from all kinds of Asian ingredients like hoisin sauce, soy sauce, rice vinegar, ginger, peanut butter, oh Yum.  Its finger-lickin’ good!  Dip the cooked meatballs in the sauce for an unforgettable flavor blast!  I love these meatballs.

Enjoy eating like it’s just you and maybe one other because it’s kind of fun to make believe, even when you’ve got a bunch of kids asking, “What’s for dinner?” at your house.  And if you want, but only if you want you can double this recipe and make more to share . . . but only if you want.
