It’s bittersweet to see the football season come to a close.  I’m a big sports fan in general, but love to watch football since all three of my boys play the game.  The Super Bowl officially marks the end and although I don’t follow the NFL as closely as I do the college conferences, we usually tune in to the game and enjoy a meal.  I’ll often make a big pot of soup like Pasta e Fagioli or Vegetable Beef  or Chicken Taco.    I’ll make homemade rolls like the Whole Wheat Dinner Rolls I posted last November.  We also like to munch along with appetizers like this Nine-Layer Dip.  It’s easy to make and of course, you can improvise with ingredients you have on hand.  I’m not counting to make sure I’ve got all nine layers; sometimes mine only has six or seven!  No judging there!  Dip with fresh vegetables or whole grain tortilla chips.

A lot of typical appetizers load up on too much fat and cream like Chicken Wings or Artichoke Dip or Meatballs.  I’ve made healthy and tasty substitutions for all of these (see below).  Typically a layerd dip like this one is full of extra fat from meats, cheese, sour cream, avocados.  But this modification focuses more on the vegetable toppings like salsa, tomatoes, cilantro as well as using seasoned black beans instead of meat.  I’ve kept the healthy fat in the avocado, but switched to light sour cream.  It’s loaded with nutritional value and serves a big crowd.

This photo was actually taken at Bariatric cooking class last fall and I’ve waited too long to share.  The class loved this recipe.  It was one of several dishes we sampled from our “Potlucks, Picnics and Pigskin Parties” class.

Simple Nine-Layer Dip

Prep Time: 20 minutes

Yield: 10-12 servings

  • Simple Nine-Layer Dip
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (1.5-ounce) package taco seasoning
  • 1 cup light sour cream
  • 1 cup bottled mild salsa
  • 1 1/2 cups grated cheddar cheese
  • 1 cup grape tomatoes, halved
  • Juice of 1 lime
  • 1 large avocado, diced
  • 2 Tbsp chopped green onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped fresh cilantro
  1. Arrange beans onto serving platter and mash coarsely with fork. Spread beans evenly over entire platter. Sprinkle taco seasoning over top.
  2. Spread sour cream over beans.
  3. Spoon salsa by the tablespoon over sour cream layer and then spread gently to coat but not mix into the sour cream.
  4. Sprinkle grated cheese over salsa layer.
  5. Top with tomato halves.
  6. Squeeze lime juice over avocado then arrange pieces over tomatoes.
  7. Sprinkle green onions over avocados.
  8. Sprinkle red peppers over green onions.
  9. Sprinkle chopped cilantro over entire dish.
  10. Store in refrigerator until ready to serve.
