Simple Chicken Parmesan
Don’t we all love Chicken Parmesan? But it’s summer time; we don’t necessarily want to spend too much time in our kitchens, yet the family is ready to eat. What to fix? I developed this abbreviated version for college kids who needed simple and easy. Give it a try! It might just become one of your “go-to” recipes when time is tight . . . like tonight!
Simple Chicken Parmesan
- Simple Chicken Parmesan
- 1 cup whole grain pasta
- 1 cup cooked diced chicken
- ½ cup shredded part-skim mozzarella cheese
- 2 cups of your favorite spaghetti sauce
- ½ cup shaved Parmesan cheese
- 1 tsp dried or 1 Tbsp chopped fresh basil leaves
- Cook pasta according to package directions. Drain and keep warm.
- Arrange chicken in a 2-quart baking dish coated with cooking spray. Spread mozzarella cheese, sauce, Parmesan cheese and basil over top.
- Bake at 350 degrees for 20-30 minutes or until heated through.
- Serve over pasta. Add a tossed green salad or steamed veggies.
