Salmon Burgers with Lemon Basil Mayonnaise
It’s that time of year when we start preparing your outdoor patio by planting colorful flower pots, dusting off your patio furniture and heating up the grills. We cook the majority of our meals outdoors in the summer time, using our natural gas grill to roast, grill and saute savory, marinated lean meats and nutrient dense vegetables. Everything tastes different when grilled. I love these salmon burgers, firstly because salmon is so good for your heart with its abundant omega-3 fatty acids but also for the added flavors of peppers, onion and garlic…more good things for your heart. Salmon Burgers with Lemon Basil Mayonnaise
- Salmon Burgers with Lemon Basil Mayonnaise
- 1/4 cup red bell pepper, diced
- 1/4 cup yellow bell pepper, diced
- 1/4 cup panko crumbs
- 2 Tbsp chopped onion
- 1 clove garlic, minced
- 1 pound salmon fillets, skinned and finely chopped
- 1 large egg, lightly beaten
- 2 tsp soy sauce
- 1/2 tsp fresh lemon juice
- 1/4 tsp salt
- Cooking spray
- 1/2 cup light mayonnaise
- 2 cloves fresh garlic, minced
- 1 tsp dried basil
- 1 tsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp lemon pepper
Lemon Basil Mayonnaise
- In a medium bowl, combine peppers, panko, garlic, and salmon. In a small bowl, combine egg, soy sauce, lemon juice, and salt; add to pepper mixture, tossing gently to combine. Form mixture into 4 patties.
- Lightly coat a grill pan or skillet with cooking spray. Heat over medium-high heat until hot. Grill or cook patties, 5 minutes per side, or until desired degree of doneness.
- For the mayonnaise: Whisk mayonnaise, garlic, basil, lemon juice, Dijon mustard, and lemon pepper in a bowl until well mixed. Serve mayonnaise mixture with salmon patties.
