Maple Pecan and Coconut Granola
Homemade gifts from the kitchen are always appreciated especially when they’re delicious and nutritious! This year consider this wholesome granola made with unprocessed grains, nuts and coconut baked slowly until it reaches crunchy perfection. This has to be the best granola I’ve ever tasted. And that’s saying a lot because another very tasty granola on this blog The Best Homemade Granola Ever is also super yummy. It may have just met its match!
A key factor to making this granola is a lower temperature oven and a longer baking time. At 250 degrees and an hour and 15 minutes, this granola is worth every extra minute. Your kitchen will never smell better too! The delicious aromas of roasted nuts, coconut and maple syrup send me into holiday baking and gift giving mode. Like I should turn on Bing Crosby’s Christmas album. And this can happen any time of the year!
I first tasted this granola at my sister-in-law’s home in Arizona. Our family was there for the BYU/Arizona game. (We won that game to the surprise of many. It was a great atmosphere in Tucson.) Denise is the ultimate hostess; she prepared a casual breakfast yogurt bar spread with fresh fruits and other toppings including this fabulous granola.
Eating whole grains like the oats in this granola is a vital part of a healthy diet, especially for our digestive health. Do you want fluffier BMs? Then eat your fiber! We don’t get enough fiber and I know I sound like a broken record each time I say this, but it’s true. Get 25 grams of fiber every day from a variety of whole unprocessed foods. A handful of this granola will provide you with about 5-6 grams. A piece of fresh fruit or berries will give you about 3-4 grams. A slice of whole grain tortilla give 3-4 grams. A 1/2 cup of beans and greens provides about 7 grams. An ounce of nuts is around 2 grams and 3 cups of popcorn is 4 grams. Are we there yet? It takes conscious effort to achieve that level. Work at it every day! It will preserve your heart health and keep diabetes away.
- Maple Pecan and Coconut Granola
- 3 cups old fashioned oats
- 1 cup pecan halves
- 1 cup sliced raw almonds
- 3/4 cup shredded coconut
- 1/4 cup pure maple syrup
- 2 Tbsp. brown sugar
- 1/4 cup coconut oil, melted
- 3/4 tsp. sea salt
- Preheat oven to 250 degrees F. Line two 11 x 17-inch baking sheets with a silpat liner or parchment paper.
- Combine oats, pecans, almonds and coconut in a large mixing bowl, stirring to combine..
- Combine syrup, brown sugar, oil and salt in a small mixing bowl, whisking to combine. Pour
- over the oat mixture, blending together thoroughly with a large wooden spoon.
- Divide mixture evenly between the two prepared baking sheets, spreading evenly in a single layer. Bake for 1 hour and 15 minutes until golden brown, tossing occasionally to ensure even baking. Remove from oven and allow to cool completely on baking sheets. Break up into clumps and store in an airtight container for up to one month.
