Greek Chicken Sheet Pan Dinner
Time with family is the most important kind of time we can spend. Nobody ever regrets spending more time with family. The office, on the other hand? . . . With school in full swing why not make family time around the kitchen table a priority. This was a pretty big deal when I was growing up and I kept at it while my kids were growing up. It’s easy to forego. It’s easy to just grab fast food and eat in the car on the way to practice. It’s easy to just have your kids pour themselves a bowl of cereal. But that’s not good for kids. Kids need structure and they need you to look in their eyes and ask how their day played out. And by pairing that conversation with a homemade meal it shows you care even more.
Save precious time by making quick and flavorful meals like this fantastic sheet pan dinner that is prepped and baked on one single baking sheet. Sheet pan dinners are amazing! They’re a lot like stir-fries on the stove top except you let the oven do the cooking. All you have to do is season everything, toss the meats and veggies around and put it in the oven. Let it bake for 30-35 minutes, make a side salad or whole grain while you’re waiting and poof! you’ve got dinner ready in short order. And clean-up is a snap! More time for that kid conversation at the table.

This Greek sheet pan is fantastic! Oh I already said that, but it’s so true. The flavors blend beautifully. Nutritionally, this dish is a home-run. Lean chicken with anti-inflammatory vegetables topped with heart-healthy fats. Everything is loaded with nutrients. And if this wasn’t enough, after the baking I top with feta cheese, oil-packed sun-dried tomatoes and kalamata olives. Are you kidding me? My taste buds are jumping for joy!
This is a great dish for company too because it goes together so fast and you likely have many of the ingredients in your refrigerator and pantry already. Feel free to substitute chicken breasts for the thighs, or red potatoes for the zucchini, or fresh basil instead of dill. Mix and match. Sheet pan dinners are the perfect way to empty out the frig so use what you’ve got.

- Greek Chicken Sheet Pan Dinner
- 1 pound boneless chicken thighs
- 1 red bell pepper, sliced
- 1 sweet onion, sliced
- 1 zucchini, sliced
- 2 Tbsp olive oil
- Juice of 1 lemon + 1 lemon sliced
- 2 Tbsp balsamic vinegar
- 2 Tbsp chopped fresh dill
- 2 Tbsp chopped fresh oregano
- 1 Tbsp paprika
- 2 cloves garlic minced or grated
- 1/2 tsp each sea salt and freshly ground black pepper
- 8 ounces feta, cubed
- 1/4 cup oil packed sun-dried tomatoes
- 1/4 cup kalamata olives, pitted
- Preheat the oven to 425 degrees F.
- Combine the chicken, bell peppers, onion and zucchini on a rimmed 11 x 7-inch baking sheet.
- Combine olive oil, lemon juice, balsamic vinegar, dill, oregano, paprika, garlic, sea salt and pepper in a small bowl. Whisk to combine. Pour over chicken and vegetables and toss well to evenly coat. Arrange everything in an even layer. Add the lemon slices and then transfer to the oven. Roast for 30-35 minutes, tossing halfway through cooking until the chicken is cooked through and the vegetables golden.
- When ready to serve, transfer chicken and vegetables to a serving plate and top with feta, sun-dried tomatoes, and olives. Garnish with any remaining oregano or dill sprigs.
Notes
*Prep ahead: Chop veggies, make olive oil spread and marinate chicken overnight if possible. Then arrange cut veggies and marinated chicken on baking sheet and bake as directed.
