Caribbean Chicken
I love this recipe. Ok, I love a lot of chicken recipes but this one, inspired by a delicious dish my sister-in-law Mary serves at family functions makes my mouth water. I try to keep all the ingredients on hand just so I can make it when the craving calls! Plus it makes my house smell amazing! It’s pretty sweet with the brown sugar or honey but the mango chutney/curry/mustard combination makes it come alive. You may have to hunt for the bottled chutney; a lot of stores keep it in the canned fruit aisle placed up high but just ask your store manager. I picked up Trader Joe’s mango chutney last week and love it. If desired you can serve this over cooked brown rice. So tasty!
Caribbean Chicken
- Caribbean Chicken
- 1 Tbsp butter
- 1/4 cup minced onion
- 2 cloves garlic, minced
- 1 pound chicken tenders
- 1/2 cup honey or Brown-sugar Splenda
- 1/4 cup mango chutney
- 1/4 cup currants
- 1/4 cup Dijon mustard
- 1 tsp curry powder
- 1//2 tsp salt
- Melt butter in a large skillet over medium-high heat. Add onion and garlic; saute 1 to 2 minutes or until onion is soft.
- Add chicken tenders; cook 5 to 6 minutes or until browned on each side.
- Combine honey, chutney, currants, mustard, curry and salt in small bowl; stir to blend.
- Pour over chicken; stir to blend. Cover and reduce heat to medium; let simmer for 10 to 12 minutes.
- If desired, serve over cooked brown rice.

Oh my goodness Karen, I cook this recipe at least once a month!! I still have the old recipe book you made for our young women’s group and the paper recipe is covered in curry and mango chutney! It was the recipe I used when I first had my parents over for dinner in my new apartment my junior year of college. I also cooked it for a gourmet club we used to belong to, and have since shared the recipe with many friends. It is so delicious and I’m glad it’s online now so I don’t have to be so careful with the old paper recipe :).
