Berry Yummy Cheesecake Parfait
Everyone in cooking class this week loved this parfait. It’s almost a dessert, but can be served as a tasty breakfast treat. Switch up the flavors of the pudding, the yogurt or the fruit for a variation.
Berry Yummy Cheesecake Parfait
- Berry Yummy Cheesecake Parfait
- 1 cup each fresh blueberries and sliced strawberries
- 2 Tbsp agave nectar
- 4 ounces light cream cheese, at room temperature
- 1 (4-serving) package sugar-free cheesecake instant pudding mix
- 2 cups low-fat milk
- 1 (6-ounce) container strawberry cheesecake light yogurt
- 1/4 tsp vanilla extract
- 1/2 cup chopped honey roasted almonds
- Combine blueberries and strawberries and agave nectar in a bowl and mash about 1/4 of blueberries with a fork to release some juice. Let stand, stirring once or twice, until sugar has dissolved, about 5 minutes.
- Combine cream cheese, pudding mix, milk, yogurt and vanilla in a large mixing bowl and beat with an electric mixer on medium-high speed until fluffy, about 3 minutes. Cover and refrigerate for 15-20 minutes or until set.
- Spoon 2 Tbsp. of blueberry mixture into each of 8 parfait glasses. Top with a heaping tablespoonful of cream cheese mixture and 1 Tbsp chopped almonds. Repeat, layering, ending with chopped almonds. Serve immediately or cover and refrigerate for up to 8 hours before serving.
