Chicken Avocado Salad

Simplicity is often the most sublime.  When a few ingredients come together to create a masterpiece, then no need to add more.  That’s how I feel about this salad.  It may even feel common to you, but believe me, you need to make this and then you ‘ll know what I’m saying.   You likely have all the ingredients to make it which makes it even more sublime.

Take rotisserie chicken and shred it (this is key to production),  add diced avocado, chopped cilantro, diced red onion, fresh lime juice and olive oil.  Then grind pepper and salt over top.  Toss and you’re done.  Cover with plastic wrap and chill to give it time for flavors to meld, but if you want to serve right away, that’s ok too!  So you see what I mean?  Simplicity = Sublime.

Avocado season is here and it’s about time.  Prices have been very high so it’s been awesome to purchase large Haas avocados for 75 cents a piece, down from over $2 in the winter months.  And do we love our avocados!  I grew up with avocado trees in my Southern California backyard so we paid 0 cents for our avocados.  I’m willing to pay the price because nutritionally an avocado contributes nearly 20 vitamins and minerals, making it a great nutrient dense food choice. They’re virtually the only fruit that contains heart-healthy monounsaturated fat – good fat and they’re naturally sodium, sugar and cholesterol free.  I need this in my diet.
