Oatmeal Cranberry White Chocolate Macadamia Cookies

Weekends are often great times to bake something yummy.  I love to share with friends, new neighbors and ok, I guess I need to share a few with the family.  This delicious cookie is wonderful any time of the year.  It’s soft, chewy and full of the best ingredients.

White chocolate chips, craisins, oats, macadamia nuts.  What?  All in one delicious soft cookie?  My friend Kami introduced me to this delicious cookie many years ago and I’ve been wanting to put them on the blog.  So I finally got around to it.  Sorry for not getting these to you earlier.  You’re going to love them.  Make them a regular part of your baking.


Cookies, like all baked goods, fit into a healthful diet.  If we restrict ourselves from eating any goodies we may be missing some of the joys that food brings.  It’s all about balance.  It’s all about variety.  And it’s all about moderation.  We don’t need to eat the whole batch. We can enjoy one or two, now and then as we want them.  Listen to your body’s natural appetite signals.  They’re wired to help us figure out what our bodies need and want.

Isn’t it awesome to enjoy such a wide variety of cookies?  I’ve baked so many different varieties.  Do I have a favorite?  I’m not sure I do.  When I eat a cookie I want it to be soft, chewy, full of surprising bites of flavor.  Here are a few of my favorites:

Oatmeal Cranberry White Chocolate Macadamia Cookies

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 30 cookies

Oatmeal Cranberry White Chocolate Macadamia Cookies

  • Oatmeal Cranberry White Chocolate Macadamia Cookies
  • 1/2 cup butter, softened
  • 1/3 cup sugar
  • 1/3 cup light brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/2 cup dried cranberries
  • 1/2 cup chopped macadamia nuts
  1. Preheat oven to 350 degrees F. Line a 9 x 15-inch baking sheet with parchment paper or silpat liner.
  2. Beat the butter, sugar and light brown sugar in the bowl of an electric mixer on medium speed until fluffy. Add the egg and vanilla and beat until combined.
  3. Combine the flour, oats, baking soda, cinnamon and salt in a medium bowl, whisking to combine.
  4. Add dry ingredients to the wet ingredients and beat until just combined.
  5. Stir in the white chocolate chips, dried cranberries and chopped macadamia nuts. Refrigerate dough for 30 minutes.
  6. Scoop rounded tablespoons (medium size scoop) of dough onto prepared baking sheets about 2 inches apart. Bake until golden on the bottom, 8-10 minutes. Cool on the baking sheets for 10 minutes then transfer to wire racks to cool completely.

Notes

Cook time includes 10 min cooling time on racks after baking.
